Preparing Crabs

Crab is a delicious shellfish and can be used in a wide range of recipes, from salads to soups and mouth watering crab cakes.

1.
Place the crab on its back on a hard surface and twist off the claws

Use a heavy knife to cut the centre part into four. Use a skewer to remove the flesh. 

2.
To remove the centre piece, hold the crab with both hands and use both thumbs to push the centre up and out of the shell

Use a spoon to remove the brown meat from inside the shell.

3.
Remove the small stomach sac which is situated behind the crab’s mouth.

7.
Use a knife or heavy object to gently crack the shell on the claws and remove the white flesh

4.
Pull away the soft, feathery gills which are attached to the edges of the centre part and discard

   

 

Preparing Lobster

Lobster Preparation | 1 1.
Remove the lobster claws.
Lobster Preparation | 1 4.
Remove the stomach and discard.
Lobster Preparation | 2 2.
Use a strong scissors to cut away the underside of the shell.

Use a hammer or rolling pin to gently crack the claws.
Lobster Preparation | 3 3.
Remove the flesh.

Remove the meat from the claws.
